A recipe we tried last year and it went down a storm. Made from fresh Peruvian Aji chillies and mangoes, this is a light and fruity sauce with a totally tropical twist. We were late in ordering these chillies so only managed to get a 1/4 of the amount we wanted, hence the limited stock, grab it while you can.
This years latest sauce development is straight up fire. A sauce made from classic mexican Pico de Gallo chillies, left to ferment for 2 months. It is simply chillies, salt, garlic and a tiny bit of sugar. It has a mean punch and a great depth of flavour from the fermentation process. (Please note because it is a fermented sauce and there is no vinegar it should be kept in the fridge.)
